Gluten Free Diet - Gluten Free Foods

Gluten is a mixture of proteins found in grains such as oats, wheat, barley, kamut, and rye.

Coeliac disease is a permanent intolerance to gluten food.
There are unmistakable signs of this disease. Most sufferers have generic problems such as intermittent diarrhea, abdominal pain or, conversely, may not show any gastrointestinal problem. Often the symptoms may even be confused with those of other diseases such as irritable bowel syndrome, gastric ulcers, Crohn's disease, anemia, skin disorders or nervous disorders.

The small intestine it is the headquarters of the absorption of nutrients into the bloodstream, it is covered with tiny bumps, like tiny hairs, called villi, whose function is precisely to absorb vitamins, minerals and other nutrients from food that is ingested. Inefficient absorption of nutrients can deprive the brain, nervous system, bones, liver and other organs of energy and cause vitamin deficiencies that can lead to other diseases. This can be especially serious in children, who need proper nutrition to develop and grow.
The exact causes of celiac disease are unknown, it is certainly an inherited defect and it can occur at any age.

Today, millions of people must avoid all foods containing gluten to treat the disease and prevent complications. This means all foods or ingredients derived from most cereals such as pasta, bread, pizza, in order to avoid serious damage to the intestinal mucosa.

The foods allowed in a gluten-free diet is mainly meat, fish, dairy products, fruits, vegetables, rice, corn and potatoes.
Fortunately, for lovers of bread and pasta, who suffer from celiac disease, there is now a growing number of gluten-free products on the market.

Recently, however, are not just celiacs that follow a gluten free diet.
When foods with gluten are ingested, they can add to the load on your liver and are best avoided during a detox for this reason. Some foods containing gluten can be included in small amounts (rye, barley, spelt and oats); however if you know that you are allergic or sensitive to gluten, I suggest you to avoid them entirely.
If you are insure of this, once you start your detox, take note of any digestive reactions you may have after eating these foods. If you do react, leave them out of your diet for the remainder of your detox.
