Recipe Instructions

Ingredients:

  • 1 onion, diced;
  • 2 bay leaves;
  • 4 garlic cloves pressed;
  • 1 carrot, sliced;
  • 1/2 cup celery;
  • 12 medium potatoes, cut into little cubes;
  • 7 cups broth;
  • 1 cup spinach, chopped;
  • salt and pepper to taste.


  • Preparation:

    In a large pot, over high heat, mix in some broth, onion, garlic, bay leaves, carrots, celery and pepper for five minutes. Add water and cook until the vegetables are soft.
    Add potatoes and broth and bring to boil. Lower heat and cook for 40 minutes.
    Put half mixture in a blender, process until smooth and return to pot and cook an additional 20 minutes.
    Add spinach and simmer until wilted.
    Add salt to taste.

    This is a very tasyy soup; I really suggest to incorporate it in your detox diet plan.
