Usually large and elongated with a green smooth skin, the American cucumber is used in a multitude of salads and other recipes.

Cucumbers'skin is rich in fiber and contains many beneficial minerals such as silica, potassium and magnesium.
It also contains Vitamin C and caffeic acid, both of which help soothe skin irritations and prevent water retention.

Cucumber work as a diuretic and detox aid since it facilitates excretion of wastes through the kidneys.

Cucumbers neutralize excess acidic waste produced in the body and facilitate the elimination of waste from the bloodstream. They also facilitate the movement of the feces through the intestine.

Additionally, these vegetables contain very few calories and carbohydrates.

Cucumber Soup Recipe

Ingredients:


  • Yogurt: 3 cup;
  • Cucumber: 1;
  • Scallion: 1;
  • D
  • Dill: 3 tablespoon;
  • Salt;
  • Medium Tomato : 5 ounces, seeded and diced;
  • Olive Oil: 2 teaspoon.


  • Preparation:

    In a blend, combine the yogurt, cucumber, scallion and dill. Pulse until pureed. Season, to taste, with salt and pepper. Put into individual bowls. Top each serving with 2 tablespoons of diced tomato, drizzle with 1/2 teaspoon of olive oil and garnish with a dill sprig.

    This soup is an excellent source of protein, vitamin A, Vitamin C, Calcium and vitamin K.

    You can eat this delicious and healthy carrot soup as part of your detox diet plan.
