Analysis of the avocado shows it to be rich in fat, protein and mineral salts. The avocado equals the olive in the amount of fat and protein, but it is more palatable. It is richer in protein than most fruits, while the fat is very palatable and digestible, and much superior that any animal fat.In Mexico and Central America this fruit often replaces meat. One hundred grams of avocado pulp can supply 20 g of oil, 6 g of carbohydrates and 2 g of protein. The pulp is a valuable source of carotene, niacin, pantothenic acid. Avocado pulp is also a source of vitamin K, folic acid, ascorbic acid and biotin. To prepare an avocado, first wash it off and cut it in half, being careful not to sever the large seed pit. Twist the halves to separate them, then pick out with the knife. You can now slice, dice, mash, or scoop little balls out of the avocado. This fruit is normally eaten raw but you can also heat it gently. Avocado is also very helpful for constipation. Simply peel 1-2 avocados; add some salt, 4 tablespoons of apple cider vinegar 2 tablespoons of lemon. Drink and you will go to the bathroom in a couple of hours.
